Food Friday

This soup is super duper easy & really very tasty.
I added a side of rice crackers and hummus, YUM

This was a recipe I found from one of my favorite
Instagram foodies Renee of Plant Based Mum
I just changed it around slightly but not by very much at all.


It's super easy to make just chop an onion and 3 or 4 stalks of celery and saute till soft.
Than add lots of garlic, 3 finely sliced carrots, 2 cans of white beans (drained & cleaned)
with one can of diced tomatoes (which I like to slice up a bit with a knife)
I added a whole whack of kale (de-stemmed of course)
1 tsp of oregano, 1 tsp of thyme, 1 tsp of rosemary, red pepper flakes
and last but not least 5 spoons of a vegetarian soup base all mixed in with 6 cups of water.
You'll bring all of this good stuff to a boil and than reduce to as simmer for about 40 minutes.
Serve into bowls and whiles the soup cools, slice up and cook some vegan sausage
and serve the cooked sausage on top of the soup just as you serve it.
It's SO tasty and yummy and kind cruelty-free eating.
