Guys if you ever see these Gusta vegan sausages in your grocery stores you have to try them.
They are the best vegan sausages we've tried yet, the Montreal flavor is our most favorite.

Vegan Food Friday - Tomato Veggie Soup & Sandwiches
Food Friday time...
I don't always give you guys recipes for these pics because they are just meant
as food inspiration if your stuck for dinner ideas and it's also just my gentle way to show you guys
how beautiful and healthy vegan eating
is for both you and your tummy & heart but also for animals & the planet.
This is something we have pretty much every single week.
A homemade tomato veggie soup
(just through in all of your favorite veg with blended tomatoes, rice, chickpeas and pasta too in 1 pot)
right now we have tons of tomatoes to use from the garden
so we've been making sometimes two pots per week (but I am soup monster).
Sandwiches are always a nice additional side,
use vegannaise, tofurky slices, earth island cheeses.....Vegan YUUUMMM.

Vegan Food Friday - Beet Patties & Kale
Time for Food Friday because I LOVE food & being vegan and showing people that
us vegans 'don't starve' we get to enjoy all kinds of yumminess that's good for the earth, animals & us.

Anyhow, the one thing in our kitchen that we couldn't do without is our big stainless steel steamer (besides my espresso machine & my smoothie blender!)
Tonight for example we're having this...steamed kale with nutritional yeast (we L-O-V-E it)
with a store bought beet patties on the side (sorry I forget the brand at the moment)
With steamed buttery mashed potatoes with a topping of vegan sour cream...Quick & Yummy.

Food Friday - Miso Noodles With Vegan Egg
Okay you guys so the vegan eggs that you can buy right now don't actually taste like eggs
(which is okay with me because eggs always made me sick to my stomach
when I actually thought about what I was actually eating!)
and let me be honest, on their own like as a scamble, they aren't great
BUT if you mix them with stuff or use them in cakes etc they do the job and do it quite well.
I don't think for vegans that it's all about taste replication...it's about an alternate for kinder choices
so if something doesn't taste like it's intended to, it's okay,
because I for one am still happy to have that kinder choice.
Anyhow, I am a noodle fiend...I could eat noodles 3 meals a day.
and this is a recent favorite, especially on those lazier cooking days.
We just use a package of those ready made noodles (a vegan one of course)
and keep in mind that just because they say 'beef' for example sometimes they are still vegan
BUT on the flip side sometimes they say 'veg' but still have fish or chicken, so check the ingredients.
We add in tofu and kale and sometimes mushrooms etc & lately we've been using the Vegan egg
replacer in one of those poaching microwave thingies and putting it on top.
Mixed with the yumminess of the miso noodles, it's really tasty...
don't get your hopes up but do give it a try, you might be happily surprised like me!
(and for happy gut flora, which I always need help with, a good side of fermented beets or kimchi).

Food Friday - Vegan Roasted Pizza
Are you in the mood for Food Friday?
Well here's an ideal for all of my fellow vegans out there if you need one...
This is one of our favorite usual easy Friday night go to dinners.
Vegan roasted pizza with a nice big side of streamed kale with nutritional yeast.
Cut up tomatoes, sweet potatoes & onions, drench it all with olive oil & salt on a flat pan
and than let them roast in the oven at 350 for about 40 minutes.
After that put all of that roasted yumminess on top of your pizza dough
and cook it all again for maybe another 20 minutes. Simple but so yummy...Enjoy!

Vegan Food Friday
This is our healthy & easy usual go to meal for when we're hungry but to tired for anything fancy.
If your looking for some vegan dinner ideas this weekend, maybe this will inspire you.
Tofu sauteed with mushrooms, steamed kale with nutritional yeast & olive oil & sweet potato mash.
Don't forget to add some garlic salt & a splash of maggi to the tofu/mushroom mix. Enjoy!

Food Friday
I've been vegetarian for a really long time and going the step further to being Vegan
was easy once I educated myself on the horrors of the dairy industry.
It was made easier too because typically I don't crave anything super much (except for coffee!)
BUT once in a while I was still craving just one thing...tuna salad sandwiches!
Well a couple weeks ago my honey tried his had at Tuna-Free Tuna salad sandwiches
and holy crap, we are over the moon with it and right now it's all we want to eat!
You gotta try this recipe like now...
Tuna-Free ‘Tuna’ Salad Sandwiches (My honey's recipe)
19-oz can of salt-free chickpeas, drained and rinsed
½ cup vegan mayo
2 tbsp dijon or whole grain mustard
2 tbsp Maggi
1 tbsp balsamic vinegar
4 tsp celery seeds
2 celery rib, chopped
2 tbsp minced green onion or red onion or shallot
½ tsp freshly ground black pepper
2 tbsp dulse flakes (or more to your taste)
Mix all ingredients in food
processor, just don't blend too much,
spread on your favorite bread and HELLO YUM.

At first I wasn't a huge fan of the Tofurky logs but now I really like them because I know how to
prepare them properly and now after holidays when they are on sale
we buy several for the freezer so that we can have them on non-holiday times too.
Trick 1: You gotta slice the log deeply on all sides so the baste seeps in
Trick 2: surround the log with loads of veggies (and cook all of it covered)
we use lots of potatoes, carrots, turnips, onions, garlic and sometimes like here, green peas.
Trick 3: When you serve it, slice it very thinly, not thick, trust me it makes a difference
Trick 4: Make your own gravy cause the one comes with kinda sucks!
and don't forget the cranberries & vegan stuffing....hello Tofurky!

Food Friday....Vegan Frittata
I made this Vegan Frittata this week and my honey and I loved it.
(We are planning on making a pizza version tonight with mushrooms & vegan pepperoni).

It's super easy...
Whisk together:
2 cups of chickpea flour
1/4 cup of olive oil
1/2 cup of nutritional yeast
2 cups of water
Salt and pepper to taste
Pour into a oiled casserole dish.
Than add to the mixture:
1-2 chopped garlic
A big handful of chopped spinach
A whole tomato chopped
1 whole red pepper finely chopped
Sun dried tomatoes to your liking
Olives chopped & added to your liking
Bake for 1 hour at 350°c or until set.

Food Friday
Like I was telling you last Friday, we got TONS of lettuce from our sweet little garden this year,
Green leaf, Red leaf, Romaine, Head, Boston, yum yum yum...my tummy LOVES leafy greens.
Give this mix a try...loads of leafy greens & sunflower seeds with grape seed oil, lemon & agave
It's a super simple super fast mix and a favorite go-to of mine.

Food Friday - Our Veggie Boxes
We've had been wanting to put raised veggie beds in our front yard for years now
so finally this was the season for that project to happen and we just love them.
It was such a pleasure to see how well everything was growing all season long.
We grew 4 different kinds of lettuce & didn't have to buy any from the store for weeks.
We did Roma, beefsteak and yellow tomatoes & have been including them in most dishes lately.
We did Purple, green leaf and tuscan kale and gobbled it all down (my niece loved the garden kale).
and we grew basil, spearmint and oregano and cucumbers. I LOVE growing things, do you?

Going Far For Vegan Eats
Sometimes when you live in a little city of meat-eaters and hunters,
you are willing to drive 1.5 hours
for beautiful kind vegan fare that you can't really get in your own city.
Before a day of mountain biking we fueled up at (the vegan) Tucos Tacos & than enjoyed donuts & cupcakes at a vegan bakery across the street, both owned and run by a husband & wife team.
I love quirky unique places, especially when they offer kind cruelty-free eats.

Food Friday
So if your a veg head like we are, you've got to make sure your getting legumes and beans...
This is a super easy dish that we whip up often, it's full of flavor and loaded with beans for protein.
It's all in one pot....put in a can of tomatoes, a couple of fresh ones diced in too, potatoes, cauliflower,
chickpeas, kidney beans, lots of garlic & lots of curry...cover & cook until all is soft. ENJOY XO.

I LOVE strawberries dipped in almond butter
But I also love a huge salad, this one was grape tomatoes with cucumber, pepitas, almonds
and my usual olive oil, lemon juice and agave dressing.

Food Friday
We have a little tradition....Scone Sunday.
I am SO not a baker
but every few Sundays I like to treat my hon, my niece and myself by whipping up homemade scones that I serve with jams and butter and tea with soy milk...
I yell 'Scones are ready' and they come running with smiles plastered on their faces,
I kinda love it, this little tradition, this sweet bit of domesticity.
I am determined to learn vegan baking...it's a summer time goal,
(but so is a lot of biking to work off the desserts that I do make!)
