Tahini Date Coffee Cups

Hi guys, sorry, I meant to post this last week but things got away from me.
You have to try these, they are so tasty and different than any other dessert.
I made them a couple weeks back and now we keep a ready supply in the freezer
because they are the perfect little healthy treat when our sweet tooth scream for something.

"Tahini Date Coffee Cups"


Coating:
·  1/2 cup tahini
·  1/2 cup coconut oil, melted

Filling:
·    1 cup of dates (make sure you get the pitted kind)
·   2 teaspoons coconut oil
·   1 teaspoon vanilla
·  1/2 teaspoon sea salt
·   1 cup of water (to soak the dates in)
·   3-4 tsp of instant coffee

Instructions:

1. Put the dates in the water and soak for atleast 2 hours or until soft enough for you to mash.
                     2. Line 20 to 22 mini muffin cups with paper liners.

                     3. In a medium bowl, beat together the tahini and coconut oil until smooth. Line the cups with a little under half of the mixture. Chill in the refrigerator for 30 minutes until set.

                     4. Make the filling by mashing up the dates using as much of the water as you need from the prune soaking, I just use a fork, it takes some arm power but it won't take too long.  Than add the coconut oil & tahini mix, the vanilla, the salt and the instant coffee and mix until you have a smooth, thick paste.

                   5.. Remove the cups from the refrigerator. Evenly drop about a teaspoon of the filling into each cup, let it pool in the middle, do not spread out.  Than fill the cups with the remaining of the tahini mixture until each cup is. 

6. Chill in the refrigerator again until set and then gobble up and enjoy.

(These need to be kept in the freezer afterward or in the fridge otherwise they will melt).

Gusta Cheese

So I know I have already highly suggested that you guys try the Gusta sausages,
well the Gusta cheese turns out to be good too, because well lets face it a lot of Vegan cheese sucks!
(I highly suggest trying out and supporting your city's local vegan artisanal cheese makers)


We find the Gusta Swiss is great on sliced as is, melted on pizza or on mac n' 'cheese'.
but beware of the original flavor, don't expect a cheese taste!,
it is tasty no doubt but it's no way shape or form tastes like cheese, it 100% tastes like meat.

Food Friday - Vegan Nachos

Vegans can eat pretty much everything non-vegans eat, just in a kinder format...
like nachos for example...look at how amazing and delicious our vegan nachos are YUUMM.
Just spread out your favorite tortilla chips, cook up some soy meat with nacho seasoning,
sprinkle the 'meat' on top, than your favorite salsa, fresh tomatoes, olives, lettuce, vegan cheese


(we like melted Daiya on our nachos but not unmelted Daiya! It tastes totally different when melted)
put the tray in an oven to melt all that kind healthier 'cheese',
cut some limes & make a pitcher of some gin & tonics whiles your melting that cheezy goodness
and voila a yummy vegan platter of nachos that no mama or baby cow was exploited for.

Sweet Savory Saturday

We always come home with a lighter heart when we see more & more
vegan products on the grocery shelves...
especially in our hunting/meat & potatoes city!


We especially love the Yves kale & caramelized onion sausages.
Tonight we're trying those new Sol Cuisine Lemon Dill 'Salmon' burgers and I can't wait!
The buns & I hope your having a wonderful Saturday (we're spending it outside with the buns).

Food Friday

At first I wasn't a huge fan of the Tofurky logs but now I really like them because I know how to
prepare them properly and now after holidays when they are on sale
we buy several for the freezer so that we can have them on non-holiday times too.
Trick 1:  You gotta slice the log deeply on all sides so the baste seeps in


Trick 2: surround the log with loads of veggies (and cook all of it covered)
we use lots of potatoes, carrots, turnips, onions, garlic and sometimes like here, green peas.
Trick 3: When you serve it, slice it very thinly, not thick, trust me it makes a difference
Trick 4:  Make your own gravy cause the one comes with kinda sucks!
and don't forget the cranberries & vegan stuffing....hello Tofurky!

Food Friday

This has to be one of our favorite vegan eats over the summer and especially Fall days.
We just throw all of our favorite veg into tinfoil with olive oil, pepper etc,
wrap it up tight & throw it on the grill for about 20 minutes.


Than we throw some vegan Fieldroast or Tofurky sausages on the grill too...
cut up a garden fresh tomato...a side of vegan dressing for dipping (yum)
It's a meal to leave your heart happy with kind-eating & the unbuttoning of pants, Enjoy!

Food Friday

So if your a veg head like we are, you've got to make sure your getting legumes and beans...
This is a super easy dish that we whip up often, it's full of flavor and loaded with beans for protein.


It's all in one pot....put in a can of tomatoes, a couple of fresh ones diced in too, potatoes, cauliflower,
chickpeas, kidney beans, lots of garlic & lots of curry...cover & cook until all is soft. ENJOY XO.

Zucchini with Daiya melted on top (Daiya kinda sucks unmelted but melted it's a differernt thing)...


the always present steamed kale with nutritional yeast & tofu of course & homemade Miso soup

Food Friday

I made this for myself just the other week and it had a really yummy simple and clean taste.
I hope you'll give it a try and if you do that you love it too.
Don't forget all of my food recipes/suggestions are vegetarian, kind for animals & kind to you...


I just cooked gluten-free pasta and as that boiled away, I put a whole can of Marizano tomatoes
in a pan with olive oil, salt, pepper and cubed organic tofu piece and let that simmer away for a bit
and than I topped it with a big handful of fresh uncooked organic spinach.....YUMMY.
