Food Friday

I made this for myself just the other week and it had a really yummy simple and clean taste.
I hope you'll give it a try and if you do that you love it too.
Don't forget all of my food recipes/suggestions are vegetarian, kind for animals & kind to you...


I just cooked gluten-free pasta and as that boiled away, I put a whole can of Marizano tomatoes
in a pan with olive oil, salt, pepper and cubed organic tofu piece and let that simmer away for a bit
and than I topped it with a big handful of fresh uncooked organic spinach.....YUMMY.

Food Friday

I am going to show you what I put into one of my all time favorite green smoothies mixes.
This is one that your likely to find me having weekday mornings for breakfast.
 
 
I put in coconut milk & a big handful of oats, two organic apples, an organic banana, lots of greens,
usually arugula and romaine lettuce but another favorite alternate is kale & Swiss chard as well.

Apple Pie Cake

I tryed this recipe not long ago and it's so easy and yummy I just have to share it...

Apple Pie Cake


1 cup of organic cane sugar
2 organic free-run eggs
1-2 tsp's of almond extract
4 apples, cored, peeled and sliced
1 cup of whole wheat flour
2 tsp baking powder
and a tiny dash of salt
(A sprinkling of nutmeg or cinnamon or both is optional)

-Combine eggs, sugar and extract in a large bowl and mix well.
-Than stir in the sliced apples and than sprinkle in the flour, baking powder and salt than mix mix mix.
-Pour the lovely mixture into an 8-10 inch pie or cake pan.
-Sprinkle with cinnamon or nutmeg if you want.
-Bake at 350 for 30 minutes, cool slightly before serving....and YUMMMMM.

I've been having to back off from my studio abit lately...
I got pretty sick with a bad bladder infection, than dealing with yet another tummy flu and
I was also swept off my feet with a new migraine med that I won't be trying ever again! Ugh...
Plus there's been a serious lack of good sleep happening in this home of ours...
My honey's bronchitis has been acting up and most nights lately we are up atleast till 4am with that...
There's been rambunctious bunnies making noise all night long
(sometimes the draw back of not having bunnies in cages!)...
and our sweet Ella Luna's feet needing constant tending too...
Anyhow, ha ha...
I have been reworking some of my old 'Wee Whispy' mixed medias and having such a ball with them...
I'll show you the results of one or two on Friday, if the sun pokes out long enough to get some shots!

Food Friday: Meat-Free Sheperd's Pie

I've been planning on sharing some of my favourite food recipes on this blog of mine...
so finally here we go, I'll try posting a new recipe every Friday.
(except next Friday which I am taking off from blogging).

I make a mean Shepherd's Pie....and it doesn't have any meat in it.
Jonathan loves it, my dad always goes back for 2nd's and I think it's scrumptious (& guilt-free)...



Want to try it out, it's super easy to make???
You'll want to preheat your oven to 350 degrees.
AND
You'll want to put on your potatoes at this time.  I steam the potatoes and usually use 5-6 small ones.
THAN
-In a large pan, put 1 tbsp of olive oil...let that heat up and than...
-Add 1 large onion, finely chopped...let that cook up till the onion is nice and soft.
-Let the liquid and onions cook together for a couple minutes.
-Than add the soy ground meat (we use Yves Hamburger) and let that simmer until the 'meat' is cooked.
-Than add 1 cup of vegetable stock or a cup of water with a spoon of gravy mix.
-Than your going to add vegetables.  As much as you like. 
I usually use corn shredded from 2 corn cobs and usually 2-4 shredded carrots.
-Let the veg cook with the rest of the mixture for about 5 minutes, stirring often so nothing burns.
-Your done with the pan, wohoo....
NOW
Take a casserole dish and scoop the mixture into it, spreading it evenly.
-Spread your mashed potatoes over the mixture.
-Grate some cheese on top and sprinkle some fresh pepper and salt
THAN
Put it in the oven for 25-30 minutes and
VOILA...
